Welcome to my culinary study! In this authentic experience, I will take you hand in hand to discover the secrets of Yucatecan cuisine. As a chef from Yucatan, I will share with you the traditional techniques that have been passed down through the generations. During the class you will learn and participate in: The Art of the Taste : We will prepare from scratch the traditional marinade for an authentic Chicken Pibil, learning the exact balance of spices and annatto. Cooking Techniques: We will bring the chicken to its exact point of flavour and softness. Dough and Tortillas : You will learn to toast and cook your own tortillas by hand, the soul of any Mexican table. Yucatecan sauces: We will make artisan sauces (including the iconic habanero and purple onion) to accompany our dishes. The Sweet Touch: To close with a golden clasp, we will cook traditional crispy churros. Tasting : At the end of the preparation, we will sit down to enjoy a feast with everything cooked. We will taste the dishes together in a private and relaxed atmosphere, sharing stories and the true taste of my land.
