What you can expect

You arrive in Arita, a town in Saga Prefecture historically recognised as the origin of Japanese porcelain production. As you make your way to the restaurant, the town’s craftsmanship heritage sets the tone for an experience equally rooted in Japanese tradition. The venue is a casual sushi restaurant, the kind where local knowledge and everyday technique take precedence over formal dining.
Once inside, the sushi chef demonstrates nigiri technique directly in front of you, and you follow along, shaping rice and placing toppings with your own hands. A guide is present throughout to translate instructions and facilitate conversation between you and the chef. You work through the process at a comfortable pace, with space to ask questions and refine your technique as you go.
By the end of the session, you have a plate of nigiri sushi shaped entirely by you, which you then eat. The Q&A format means you leave with a clearer understanding of the decisions behind each step — rice pressure, fish handling, and form — drawn directly from a chef who works with these ingredients daily.
