At the Bottega Minotti Parioli, we invite you to discover a unique gastronomic heritage, born from the recovery of millennial traditions and respect for animal welfare. This guided tasting celebrates the territories of Ciociaria, Valle di Comino, and the Montagne Reatine, offering a technical and organoleptic analysis of rare and award-winning products.

The Art of Pairing: The Tasting Journey
The heart of the experience is the pairing of eight excellent cheeses and three creations from the Alta Quota Brewery in Cittareale, where the altitude of production positively influences the aromatic profile of the beers.

The journey is structured in three acts:

  • Fresh Cheeses and Princess Beer: We'll start with the delicacy of Buffalo Ricotta and the noble richness of handmade Stracciatella (Nonna Pitta Company). Pairing with our Strong Golden Ale brings out the notes of ripe yellow fruit.

  • Semi-aged cheeses and Omid Beer: We'll continue with the Marzolina di Capra with truffles (Azienda Capramara) and the original Pecorino with beeswax (Casa Lawrence). The structure of these cheeses pairs well with the Strong Dark Ale, with its strong notes of liquorice and caramel.

  • Aged cheeses and White Beer: We'll finish with the intensity of Pecorino di Picinisco PDO aged in a pit and Aged Goat Cheese with ash. The freshness of our Hoppy Blanche with spelt, citrusy and spicy, perfectly balances the spiciness and primordial scents of these cheeses.
    Details that make a difference

Each board is enriched with orange and chestnut honey, artisanal mixed pickles, and red onion compote in collaboration with the Quattrociocchi Company.
All this is complemented by the aroma of ancient grain bread from the Triticum Agricultural Microbakery.
