For example, learn about Comiteco, a pulque spirit from Chiapas, made from the aguamiel extracted from Agave Americana in Comitán. This aguamiel ferments in living fermentation vats that have been continuously nurtured for generations, creating a unique aromatic and structural profile.
Identify its aromas, flavours, and possible pairings, connecting each profile to its artisanal production process. Then, play a sensory game by introducing a key ingredient present in the spirit—such as cinnamon—so that you can smell it separately and recognise it within the drink, understanding the inspiration behind the cocktail you are about to taste.
This process will be repeated with five different agave spirits, each paired with an exclusive cocktail designed to highlight its character. At the end of each tasting, the glasses and placemats will be cleared to reveal a new storey, a new spirit, and a deeper connection between mixology and the essence of agave.
