Step into the delicious world of Maison Fossier, the oldest biscuit factory in France, founded in 1756!

This 1-hour guided visit immerses you in the heart of Reims' biscuit-making tradition and reveals the secrets of making the legendary Biscuit rose de Reims.

For more than 260 years, Maison Fossier has preserved a unique expertise recognised even by the royal courts. In 1775, its biscuits were present at the Coronation of Louis XVI in Reims, and the biscuit factory became the king's supplier.

Today, Fossier is the only biscuit factory in Reims that still produces these iconic pink delicacies, with over 100 employees.

The Biscuit rose: a legend born out of a happy coincidence
Around 1690, bakers from Champagne created a recipe to take advantage of the heat of the bread oven after baking: the “bis-cuit” (baked twice) of Reims was born!

The characteristic pink colour comes from an accident: to hide the brown marks left by the vanilla, the baker added a natural dye made from cochineal.

Since then, the recipe has remained unchanged, as has the double-baking method.

Label of excellence: Maison Fossier was awarded the “Living Heritage Company” label in 2006, recognizing its exceptional know-how.

Champagne tradition: The Biscuit Rose is traditionally enjoyed dipped in champagne or red wine.
