Apulian Mozzarella Experience – Learn the art of traditional cheesemaking
Enjoy an authentic experience in the heart of Puglia and learn about the ancient art of cheese making up close. In a picturesque natural setting, among fragrant orange trees, you will observe the work of an experienced cheesemaker, who will guide you step by step through the production of the fresh cheeses that are a symbol of local tradition.
During the live demonstration, you will learn about all the stages of the production process:
• Preparation of Primo Sale cheese
You will observe the process of curdling the milk and the subsequent pressing that gives rise to a fresh, simple, and authentic cheese.
• Explanation of the curd-making process
You will learn more about the key stage in the transformation of milk: from coagulation to the breaking of the curd, including the techniques, timing, and tools used in the traditional cheese-making process.
• Processing of stretched-curd cheese
You will witness the stretching of the curd, a fascinating process in which the curd is worked with hot water until it becomes elastic and malleable.
• Mozzarella
You will observe the manual cutting and shaping of fresh mozzarella, a symbol of Italian food excellence.
• Burratina
You will discover how burratina is made, with its stretched-curd outer layer enclosing a soft, creamy centre.
The cheesemaker will share interesting facts, anecdotes, and secrets passed down through generations, imbuing each action with history and passion.
To round out the experience, a typical Apulian aperitif will be served, featuring crunchy frisella, a selection of local products, and a glass of local wine.
