Miso is a traditional Japanese seasoning, and there are many varieties.
Nagoya has a thriving fermentation culture, and there are many stores that have been producing miso, soya sauce, and mirin for centuries.
The miso from nagoya is called “aka-miso” (red miso), which is darker in colour and slightly salty in contrast to Kyoto's white miso, but when made into ramen, it is very mild and goes very well with vegetables and noodles.
In this lesson, we will show you the recommended recipe and how to make a flavourful ramen soup.
