What you can expect
When the sun drops behind Ipoh's limestone hills, the woks roar back into life. Charcoal grills begin to glow, bakeries pull their final trays from the ovens and the aromas of soya, spice and smoke drift through streets built during the great tin-mining boom.
Tonight, we're crossing cultures. Over four hours and 15+ tastings, we'll eat our way from Ipoh's old historic Chinese centre into the colourful streets of Little India, tracing how migration transformed a mining town into one of Malaysia's great food cities. Rather than staying in one neighbourhood or sticking to one cuisine, this is an evening spent crossing the culinary lines that make Ipoh so fascinating.
Begin beside Time Tower Park, a reminder of the fortunes once made beneath the surrounding hills, before cooling down with tau fu fa chinchau. Silken soya bean meets slippery herbal grass jam, a well known Chinese tasting used to cool the body in the tropical heat.
A few streets away, follow the smell of butter into a traditional Chinese bakery. Fresh kaya puffs emerge from the oven with crisp, flaky layers wrapped around fragrant coconut jam.
Then pull up a chair. Bowls of yu kong hor bring delicate flat rice noodles swimming with prawns and pork, accompanied by beautifully braised beancurd soaking up its deeply savoury sauce.
Next, step inside one of Ipoh's historic institutions for a Malaysian classic. Perfectly poached Hainanese chicken arrives with fragrant oil rice, bright pickled acar and the city's famously crisp bean sprouts.
As dusk settles, we'll follow the smoke to the city's grills. Beef and chicken satay caramelise over glowing charcoal, the edges catching just enough flame before the skewers are plunged into rich, nutty peanut sauce. Sweet, smoky, salty, and dangerously easy to keep eating.
But we're only halfway through the storey. Take a short local bus ride to Little India, where the soya and charcoal of the old centre give way to curry leaves, toasted spices and sizzling pans.
Start with a taste of toddy, the gently fermented sap of coconut and palm trees. It's been drunk across South India and Southeast Asia for centuries and remains closely connected to the communities who brought their food traditions to Ipoh.
Then prepare for the evening's heavyweight. Banana leaves hit the table before disappearing beneath fragrant rice, deeply spiced curries, crisp pooris inflated like golden balloons, comforting potato masala and beautifully fried masala-marinated fish, all best tackled by hand.
There are 15+ tastings to conquer, but we'll bring things down gently. Finish with appam, fermented rice pancakes with delicate, lace-like edges and soft, cloud-like centres, paired with creamy coconut milk and a fragrant masala tea.
Ipoh's food storey doesn't belong to one community. That's what makes this tour different. In a single evening, we'll move from Chinese bakeries and old-school restaurants to charcoal grills, toddy and a banana-leaf feast in Little India.
