Immerse yourself in the fascinating world of fermentation and make your own fermented vegetables.
We will meet at the fermentation station in the valley building of the Fort Kniepass rest stop. There, our fermentista will welcome you and introduce you to the basics of fermentation. You will learn why fermentation has been used for centuries, what special flavours are created, and what role fermented foods can play in our diet.
After the introduction, we will go together to the fermentation room in the cellar. There, under expert guidance, each participant prepares their own jar with fresh vegetables and learns about the individual steps – from selection and preparation to the correct start of fermentation.
Then it's time to wait, observe, and listen to the “bubbling.” Because now nature does its work. You take your own fermented product home with you, where it will develop its full flavour over the next few days and weeks.
We provide the vegetables and the fermentation jar – you don't need to bring anything. The workshop is also ideally suited for beginners.
