After dark, Namba is full of tiny izakayas and standing bars with six seats, no English menu and an owner working only a few feet away. These are not places designed for tour groups—and that is exactly why they feel so personal. Your local guide knows the owners, helps you order and brings you into the conversation.

Visit three or four bars, beginning with two included drinks at the first stop. Choose sake, a highball, a Japanese sour or whatever suits the night. After that, there is no expensive preset package.
