Meet your guide at the Plazoleta Cruz del Vado and get fitted with a bike and helmet. Begin your ride along the riverbanks, pedaling beside Cuenca's rivers on mostly flat riverside paths. Take in the green landscape and the sound of the water.

Stop at the point where the rivers converge and learn about their formation, the surrounding ecology, and why water has defined Cuenca's identity for centuries.

Midway through the ride, pull over at a family-run Cuencan ice cream shop for an artisan scoop made the traditional way — a refreshing local flavour you would not find on a standard sightseeing tour.
