Cathy’s Greek heritage & expertise in healthy modern cooking will create an informative cooking experience that is fun to share with family & friends. Being a Vegetarian she has extensive knowledge of both a vegetarian & vegan diet & has adapted recipes to be healthier versions of the classics. Using all local & seasonal produce sourced from a farmer’s market & local producers.
With two versions of the classes. One a classic mezethes class which focuses on Greek starters. Small plates & bites that will come together to create a beautiful table setting to share. The traditional Greek way to eat. The second a main course class that will have more substantial hearty dishes.
Mezethes: Feta cheese in filo pastry with honey & sesame, Skorthalia, a garlic & potato dip, Dakos, traditional Cretan snack of rusk base with tomato & Cretan cheese, Tzaziki, the famous yoghurt dip, small plates of olives, cheeses, fresh vegetables, rusks & bread. Ouzo & Raki tasting & learn how to prepare the perfect Ouzo. Easy class & dishes that are quick to prepare & sure to impress your guests.
Mains: 2 dishes. Gemista, stuffed & roasted peppers the modern healthier version. Cretan Tray Bake, a rustic dish with all the flavours & herbs of Crete, a bread based dish with olives, feta & tomatoes. Also the option to swap a dish for Kolokythokeftethes, courgette & cheese fritters.
Both classes are all hands on, so you do the preparing & cooking being guided by your chef along the way. Finish by creating a beautiful Greek table setting to sit & share the dishes you have made. Available at an outdoor kitchen located in south Crete, Souda. Or the experience can be brought to your villa or accomodation, provided there is a kitchen available. Recipes will be provided to take home & keep. The best way to learn about a culture is through it’s food, and a cooking class allows you to take those dishes back home with you to share.
