We will learn how to knead the flours of ancient Sicilian grains to make a soft pizza to be baked in a lava stone oven.
In Sicily, the ancient original recipe changes and transforms as you move along the coast from west to east. The raw ingredients and toppings are adapted to the places, expressing their tradition and connection to the region: anchovies, tomato sauce, which is sometimes replaced by cherry tomatoes, local cheese, which can be tuma, caciocavallo or pecorino – in short, we will savour some of the typical flavours of Sicilian culinary tradition.
