What you can expect

  • Welcome to Santa Catarina Barahona, where you'll cook as our Mayan grandmothers did. I learned this style of cooking from my grandmother, and today I share it with you: fresh ingredients from the local market, a clay comal and firewood, a grinding stone, and recipes that have been passed down from generation to generation.

Choose one of 4 authentic recado menus and cook it with your own hands from scratch:
IMPORTANT: The entire group must choose the same menu for this date. Out of respect for time and traditional cooking, we only prepare one menu per 3-hour workshop.
    Menu 1 - Sacatepéquez Classic
The national dish of Guatemala. Pepián in a thick sauce of toasted seeds.
Includes: Pepian + Homemade tostadas + Banana rellenitos + Handmade tortillas + Fresh lemonade or hibiscus tea

Menu 2 - Flavours of the West
Traditional recipe from Huehuetenango. Green jocón with fresh herbs.
Includes: Guatemalan tacos + Jocón + Mole + Handmade tortillas + Fresh lemonade or hibiscus tea

Menu 3 - Authentic Kaqchikel Cuisine
An ancestral dish of the region. Subanik wrapped in maxán leaves.
Includes: Dobladas + Subanik + Torrejas in honey + Handmade tortillas + Fresh lemonade or Jamaica tea

    Menu 4 - Antigua Tradition
The holiday dish. Three-meat stew in tomato sauce and spices.
Includes: Tostadas + Three-meat stew + Banana rellenos + Handmade tortillas + Fresh lemonade or hibiscus tea

INCLUDES: 100% hands-on workshop, local ingredients, lunch, traditional drink, bilingual written recipe.

More than a cooking class, Utum is a close encounter with Mayan culture. I'll teach you the meaning of each ingredient, we'll grind them on a stone, and you'll share the table like a family. You'll take away new skills and the taste of home.

Workshop note: Out of respect for the time and traditional cooking methods, we only prepare one menu per group in each 3-hour session. This way, we can cook at a leisurely pace, share the table together, and ensure that everyone enjoys the full experience.
